This meal is: ✔ Fiber-rich ✔ Filling yet light ✔ Seasonal & wholesome ✔ Perfect for winters INGREDIENTS Gobhi Paratha Whole wheat flour – 2 cups (260 grams) Salt – ½ teaspoon Oil – 1 teaspoon (optional) Water – ¾ cup approx (180 ml, adjust as needed) Stuffing: Grated cauliflower (tightly packed) – 2 cups (300 grams) Finely chopped onion – 1 small (50 grams, optional) Green chili – 1 finely chopped Ginger – 1 teaspoon grated Fresh coriander leaves – 2 tablespoons chopped Ajwain – ½ teaspoon Red chili powder – ½ teaspoon Turmeric powder – ¼ teaspoon Garam masala – ½ teaspoon Amchur (dry mango powder) – ½ teaspoon Salt – 1 teaspoon (add just before stuffing to avoid water release) Roasting: Ghee or oil – 1–2 teaspoons per paratha Tamatar Ki Khatti-Meethi Chutney Tomatoes – 3 medium (250 grams), finely chopped Oil – 1 tablespoon Mustard seeds – ½ teaspoon Cumin seeds – ½ teaspoon Dry red chili – 1 Ginger – ½ teaspoon grated Red chili powder – ½ teaspoon Turmeric – ¼ teaspoon Salt – ¾ teaspoon (adjust to taste) Jaggery or sugar – 1½ tablespoons (20 grams) Water – ¼ cup (60 ml) Fresh coriander (optional) – 1 tablespoon
