Corn Flour • 2 ½ tbsp. White Sesame • 3 tbsp. All-purpose flour • 1 tsp. Red Chili Crushed • 1 tsp. Turmeric • 1 tsp. Garam Masala • 1 tbsp. Red Chili Powder • 1 tbsp. Lemon Juice • 1 tsp. Salt • 1 tbsp. Garlic Paste • 1 Egg (add ½ of the beaten quantity) Method: 1. In a mixing bowl, combine chicken pieces with corn flour, white sesame, all-purpose flour, red chili crushed, turmeric, garam masala, red chili powder, lemon juice, salt, garlic paste, and half of the beaten egg. 2. Mix the ingredients well until the chicken pieces are evenly coated. 3. Heat oil in a deep fryer or a frying pan. 4. Once the oil is hot, carefully add the coated chicken pieces and deep fry until they turn golden brown and crispy. 5. Remove the chicken from the oil and place them on a paper towel-lined plate to drain excess oil. 6. Serve hot and enjoy! PEPPER CHICKEN BIRYANI: Ingredients: • 1 kg. Chicken thighs, boneless • 250gm. Yogurt • 1 tsp. Salt • 1 tsp. White Pepper • 1 tsp. Red Chili Powder • 1 tsp. Garam Masala • 1 tbsp. Chicken Powder • 2 tbsp. Ginger Garlic paste • ½ cup Oil • ½ cup Onions, sliced • ¼ cup Carrots, cubed • ¼ cup Red Bell Pepper, cubed • ¼ cup Yellow Bell Pepper, cubed • ¼ cup Capsicum, cubed • 500gm. Rice, boiled • White pepper to taste • 4 tbsp. Butter • Saffron, dissolved in 1 tbsp. milk Method: 1. In a large bowl, mix chicken thighs with yogurt, salt, white pepper, red chili powder, garam masala, chicken powder, and ginger garlic paste. Ensure the chicken pieces are well coated. Let it marinate for at least 30 minutes. 2. Heat oil in a deep pan or pressure cooker. Add sliced onions and sauté until golden brown. 3. Add the marinated chicken to the pan and cook until the chicken is tender. 4. Add cubed carrots, red bell pepper, yellow bell pepper, and capsicum. Stir well and let it cook for a few minutes. 5. Add boiled rice to the chicken mixture. Season with white pepper and add butter on top. Also, add the saffron milk for aroma and color. 6. Cover the pan with a lid and let the biryani cook on low heat for 10-15 minutes until the flavors blend together and the rice is fully cooked. 7. Serve hot and enjoy! CARAMEL CRUNCH: Ingredients: • 1 ltr. Milk • 1 cup Sugar • 5 tbsp. Vanilla Custard Powder • 500g.m Sweetened Whipped Cream • 1 cup Sugar • 1 cup Fresh Cream • 200gm. Unsalted Butter • Pinch of Salt • 1 can Fruit Cocktail • 1 ½ cup Mixed Nuts, chopped Method: 1. In a saucepan, mix vanilla custard powder with ½ cup of milk until smooth. 2. In another pot, heat the remaining milk until it comes to a boil. Add the custard mix and stir continuously until it thickens. 3. Once thickened, remove from heat and add sweetened whipped cream. Mix well and set aside. 4. In a separate pan, melt sugar over low heat until it caramelizes. 5. Add fresh cream, unsalted butter, and a pinch of salt to the caramelized sugar. Mix until well combined. 6. Pour the caramel sauce into the custard mixture and stir until evenly distributed. 7. Finally, add fruit cocktail and mixed nuts to the mixture and gently fold in. 8. Transfer the caramel crunch mixture into serving dishes or a large bowl. 9. Garnish with additional fruit cocktail and mixed nuts. 10. Refrigerate until set. 11. Serve chilled and enjoy!
