In Germany, water is among the most strictly regulated substances. Yet not all water is the same. Water refreshes and is a basic necessity, but water is also a luxury product, as nuanced in its many varieties as the finest wines. The purpose of household tap water is to quench thirst, but premium bottled water deserves a place at the table in an epicurean context. Enjoying bottled water is not a new trend. In the Roman Empire, earthen jars filled with naturally carbonated water from Northern Germany (today's Apollinaris) were transported to Rome at great expense, and the 11 aqueducts streaming into the city were rated according to the taste and quality of the water. Like wine, water acquires a certain taste from its immediate surroundings. A winemaker would say it has terroir. Water is a natural product that originates from a particular place with properties unique to the place of its origin. In Hamburg, the 34-year-old water sommelier Jerk Martin Riese invited a handful of sceptical connoisseurs to put a selection of premium waters to the test. "There is no perfect water because everybody has a different taste. Prices for water are different as well starting from 39 cents for a 1.5 litre bottle of water and ending with a bottle of water for 65 euros," Riese said. Tasmanian rain water is the cleanest rain water in the world. Far away from industry and pollution, people collect it in huge umbrellas, so that it never touches the ground. It takes 9,750 drops of Tasmanian rain water to fill one bottle of "Cloud Juice", which costs between six and seven euros. The discriminating tongue can surely distinguish between the clean freshness of sparkling Norwegian spring water and a salty Spanish water.
