APPLE CIDER DONUT HOLES Makes 3 dozen DOUGHNUTS 1/2 cup sugar 2 Tablespoons all-vegetable shortening 2 large eggs 2 cups all-purpose flour 2 teaspoons baking powder 1/2 teaspoon salt 1/2 cup apple cider or apple juice Canola or Vegetable oil for deep-fat frying 1. Whisk together flour, baking powder, and salt in a medium bowl. Set aside. 2. In a large bowl beat together shortening and sugar until crumbly. Add eggs, one at a time, beating 15-20 seconds after each addition. 3. Beat in half the flour with half the apple cider until well blended. Add remaining flour and apple cider; beating until well incorporated. 4. In a 3-quart Dutch oven or heavy bottom sauce pan, over medium-heat, add 2-3-inches of oil. Heat the oil to 350 degrees F. An electric skillet or french fryer maybe used. Carefully drop the batter by tablespoons, a few at a time, into the hot oil. Fry until golden brown, about 2 minutes on each side. Drain on paper towels; cool for 5-10 minutes. 5. Toss donut holes in sugar and cinnamon until well coated. Also, donut holes can be tossed in powdered sugar until well coated. Toss twice, if desired. Sugar and cinnamon Mixture 1/2 cup sugar 1 Tablespoon ground cinnamon 1. In a medium bowl whisk together sugar, cinnamon, and nutmeg. Toss donut holes. TIPS: Serve uncovered up to 2-3 hours. Freeze donut holes in an airtight container, up to three months, without tossing in sugar and cinnamon or powdered sugar. Thawed donut holes in refrigerator overnight. Bring to room temperature.
