Serving Memphis since 1948, Charlie Vergos Rendezvous BBQ is the birthplace of Memphis-style dry rubbed ribs. For over 70 years, the Vergos family has been serving their signature dry rub ribs in a basement through a downtown alley across from the Peabody Hotel. You can smell the smoke from the famous charcoal-fired pit well before you arrive to their front doors. We started things off with the Rendezvous Special, a plate of smoked ham, salami, sausage, and cheese with dill pickles and pepperoncini alongside. Next, we all had the ribs, except I had the ribs and brisket combo plate. Alongside of any order on their menu are one cup of delicious baked beans and another cup of finely-chopped coleslaw which had a perfect blend of mustard, vinegar & sugar. The ribs & brisket are cooked very slowly over a charcoal fire where they are more grilled than smoked creating an outstanding mouthwatering bark!
