This box cake came in a grocery delivery. I didn't order it. It was a replacement for something, or the order picker mistakenly put it in my order. So, rather than throwing it away, I decided to bake it. I added an extra egg, used coffee and milk instead of water, added the last of my plain Greek yogurt, and used melted unsalted butter rather than the oil that was called for. Lastly, I added some vanilla extract. I baked the cake in a bundt pan at 325 degrees for 43 minutes. The cake was moist and delicious. I used a ganache icing made with 1 cup of sugar, 1/4 cup of baking cocoa, 1/4 cup of almond milk, and one stick of butter. I brought the ingredients to a boil and boiled them for one minute. I think I forgot to add vanilla. I added pecans and coconut and poured the icing over the cake. The cake fell apart, and rather than throwing it away, I cut it into pieces, put it in a container, and topped it with icing. It doesn't look pretty, but it sure tastes delicious. To make the cake look pretty instead of a disaster, add a scoop of ice cream and a few red berries, such as cherries, strawberries, or raspberries. You could even top it with whipped cream or sprinkle it with powdered sugar.
