Ingredients Sambar Masala Recipe: ---------------------------------------------------------------------- Fenugreek seeds - 2tbsp Coriander seeds - 1 cup Cumin seeds - 1.5 cups Mustard seeds - 1tsp Begdi Dried Chilis - 10-12pc Curry leaves - 12pcs Asafetida (Hind) - 3/4 tsp Turmeric - 1/2 tsp *Take all the ingredients in a grinder and grind it to make a powder. *You can store it for later use. Sambar Recipe: ------------------------------------------------------------------------- Toor Dal ( Soaked for 30 mins) - 1 cup Salt - 1tsp Turmeric powder - 1/2 tsp Pumpkin - 200 gms Ladies Finger - 100 gms Brinjal - 200 gms Drumsticks - 100 gms Onion (Finely chopped) - 1pc Onion (Bite sized pieces) - 1pc Mustard seeds - 1tsp Fenugreek seeds - 1/2tsp Dried Red Chilis - 3pcs Curry Leaves - 12 pcs Asafetida(Hing) - 1/2 tsp Tomatoes (Finely Chopped) - 1tsp Oil - 2tbsp Salt - 1tsp Kashmiri red chili powder - 1tsp Homemade sambar powder - 2 tbsp (You can use sambar powder from the market) Water - 1.5 cups Tamarind water - 5tbsp Jaggery - 1tbsp *Take the boiled Toor dal in a pressure cooker and add 1tbsp salt , 1/2 tsp turmeric powder and cook for 3 whistles. *Heat oil in a pan and add mustard seeds, fenugreek seeds, red chilis, curry leaves and Asafetida to fry. *Add the finely chopped onions and fry till they turn light brown, then add tomatoes and fry for another 5 mins till they are soft. Add all the vegetables and fry for another 5 mins. *Add salt , kashmiri red chili powder and homemade sambar powder and fry. *Add water , the bite sized onions and tamarind water and mix well. *Cover the lid and cook for 10 mins until the vegetables are soft and cooked. *Add the jaggery and then add the boiled lentils and mix. *Cover the lid and cook on medium flame for another 5 mins. *Sambaar is ready to be served with dosa or rice.
