Preheat the oven to 175°C (350°F). 2. Beat the eggs, sugar, and vanilla for 2–3 minutes until slightly creamy. 3. Add the oil and mix well. 4. Sift together flour, baking powder, cinnamon, nutmeg, and salt. 5. Gently fold the dry ingredients into the wet mixture. 6. Add the sautéed carrots and walnuts (if using). Mix just until combined. 7. Pour the batter into a greased and lined 15×7 cm round pan. 8. Bake for 30–35 minutes, or until a toothpick comes out clean. 9. Let the cake cool completely.
