This Valentine, mum and I make a heart-shaped Raspberry Cheesecake — sweet, tangy, and made slowly with intention. It may look complicated, but when we do it together, you’ll see it’s simpler than it seems. Save it, bake it, and share it with someone special 🤍 ─── ⋆⋅ 𑁍 ⋅⋆ ── Ingredients Crust • 2 cups crushed crackers • ½ cup melted butter (warm) Cheesecake Filling • 500 g cream cheese (room temperature) • ¾ cup granulated sugar • 1 cup mascarpone • ½ cup fresh milk • 2 eggs Topping • Strawberry jam (for brushing) • Fresh raspberries & strawberries • Berry sauce or compote (optional) • Edible flowers How to Make 1. Mix crushed crackers with melted butter. Press firmly into a heart-shaped mould. 2. Blend cream cheese, sugar, mascarpone, milk, and eggs until smooth. 3. Pour filling over the crust. Wrap mould with foil. 4. Place in a tray, pour hot water around the mould (water bath). 5. Bake at 160°C / 320°F for 55–60 mins. 6. Cool at room temperature, then chill 4–6 hrs or overnight. 7. Brush jam on top, decorate with berries and edible flowers. Bake slowly.
