【印度馕饼Naan】百搭面食,蓬松香软,吃過一次就愛上了。 馕Naan这个词来自于波斯语,是古波斯人在烧热的石头上烤出来的一种面饼。大部分的馕是用精白粉做的,会加盐和酵母。有的馕和面时用酸奶、乳酸菌发酵出来,吃起来非常松软且有奶香味。 视频中的配方是零失败改良版配方,用牛奶来代替酸奶,同样可以做出松软又有奶香味的馕饼。 面团材料 酵 母 2小匙(5克) 白 糖 2小匙(5克) 温 水 1/2杯(110克) 面 粉 2.5杯(350克) 盐 1小匙(2.5克) 泡打粉 1/2小匙(1克) 橄榄油 2大匙(30克) 牛 奶 1/2杯(110克) 蒜油材料 蒜 末 25克 黄 油 50克 盐 1/4小匙 (2克) 步骤 1. 混合水、糖、酵母,发酵10分钟左右 2. 面粉、盐、泡打粉、橄榄油、牛奶及发酵水一起合成柔软的面团,静置10分钟,再揉成光滑面团。 3. 面团发酵1个小时左右至两倍大 (室温高时间可能缩短,室温低,时间要延长) 4. 面团排气按扁,分割成六等分,滚圆,醒25分钟左右 5. 把面团按扁,擀成舌状。 6. 预热铸铁锅,锅底擦油,加热至冒烟,放上擀好的面饼,看到面饼表面有细小的泡泡形成,底面成金黄色,翻面。很快会有大的气泡形成。 7. 蒜末加黄油和盐,微波炉加热40秒 8. 将蒜油抹在馕饼的表面,即可食用,蓬松香软 Dough ingredients: Yeast 2 tsp (5g) 2 tsp white sugar (5g) Warm water 1/2 cup (110g) 2.5 cups flour (350g) 1 tsp salt (2.5g) Baking powder 1/2 tsp (1g) Olive oil 2 tablespoons (30g) Milk 1/2 cup (110g) garlic oil ingredients: Minced garlic 25g Butter 50g Salt 1/4 tsp (2g) step: 1.
