Welcome to what I eat in a week lunch edition! 🌱🍜 I'm lucky enough to work from home most days and while I do love some leftovers, I don't tend to make my lunches ahead very often. While I do meal plan, I tend to still prefer quick lunches I can whip up and spend more time eating and enjoying. So here's a week of quick and easy lunches that also happen to be vegetarian and take about 15 minutes or less to make. Some of the best lunches tend to come from just throwing together some fruits/veggies, a protein and a grain and then you have a relatively healthy and balanced lunch. This week's meals include: Peanut noodle stir fry with tofu & veggies, pierogies, pesto grilled cheese, eggs & toast with salad, and a cheese and cracker spread with a smoothie 🥪🥒 I hope you can take a few moments to relax, enjoy this video and remember that lunch can be as simple as some cheese and crackers! :)
