These mini tea sandwiches are such a surprising delight. The Dijon is the surprise ingredient that gives it just the right boldness, without being too heavy. This recipe is easily adjusted so that you can make as much or as little as you need. I made a double batch, so I will list the ingredients and amounts that I used. Ingredients: 2 cups (256 G) finely chopped sweet ham from the deli 8 rounded tablespoons (96 G) mayonnaise 2 teaspoons (16 G) Dijon mustard 1 container of whipped cream cheese with chives - or make your own with cream cheese and scallions 1 package of Pepperidge Farm Very Thin sliced white bread 1/2 package of Pepperidge Farm Very Thin sliced wheat bread Directions: Add the ham, mayonnaise and Dijon mustard to a bowl. Mix until well combined. Spread a layer of the ham mixture onto a piece of white bread. Spread a layer of the whipped cream cheese with chives onto a piece of brown bread. Lay the brown bread on top of the white bread, so that you have a bread/ham/bread/cream cheese layer. Add a piece of white bread on top of the stack. Cut off the crusts. Cut in half, then turn and cut the halves into thirds. This will make 6 mini sandwiches. Repeat until all of the ham mixture is used. This made 90 mini tea sandwiches. Wet a paper towel and wring it out as much as you can. Open it and spread it over the sandwiches, then wrap with cellophane. Place into the refrigerator until you're ready to serve them. I like to make them a day in advance, because it gives everything enough time to meld together. These are a favorite everywhere I take them and I'm often asked to bring them to different functions.
