There are two techniques to make fruit juice concentrate at home: boiling method and freezing method. The method you use depends on the water content of the fruit you use. Freezing method is used for high-water content fruits like grapefruit and orange. Today I will show you how to make grapefruit concentrate at home by freezing. First, put the fruit juice in air-tight containers, cover and place in freezer until the juice is completely frozen (24 hr). Then, place the frozen juice block on a strainer set on a bowl and allow to melt at room temperature to the point where you see a block of clear ice (frozen water) remains on top . When the frozen fruit juice melts, the first things that melt are the fruit juice the and flavour and stuff except for the water (a little bit water is gong to melt). After a while what'll be left on top of the block is mainly ice . Cut that off, set aside and let the rest melt. Pour the melted juice collected in bowls in air-tight containers again. Repeat the freezing and melting process twice more to attain a concentrated juice. What you end up with is concentrated juice that has less water compared to the original juice. Also the color and the flavour are more intense compared to the original juice. You can store this grapefruit concentrate in the fridge in an air-tight container for up to one week.
