Sourdough Country Loaf Recipe Makes 2 large loaves 150g sourdough starter 800g Bread flour 480g Water 20g Salt Remember you sourdough starter must be fermenting in order to make edible bread with this recipe. If you bread is inedible the problem may be your sourdough starter. 1. Mix dough together into cohesive ball Remember to pay attention to texture of dough. If it is too wet you may need to slowly add in more flour until you get the texture you see in the video 2. Let rest for up to 2 hours (optional) 3. Begin stretch and folds or coil folds or lamination 4. Repeat folds until dough is smooth and forms a round ball shape Suggestion: Perform a set of folds every 30min-1hr until you notice the dough transform 5. Let dough rise till you notice is has increased by double or even a little more. If it is warmer than 75 degrees where you are mixing your dough, monitor the dough very carefully and pay attention to how large the dough is expanding are time goes on. 6. Begin dividing the dough into 2 and from the dough into looser balls 7. Let the dough relax and expand on the counter for 30 min-2hrs 8. Perform final shape and place the dough in final proofing bowls or baskets 9. Let the dough expand until it fills or overfills the bowls slightly Baking Instructions 10. Preheat your oven to 450 degrees Fahrenheit and preheat cookware along with it I recommend baking with a tray on the bottom rack of oven to help prevent bread from burning on the bottom 11. Bake in a preheated dutch oven or any oven safe pot with lid for 25-30 with lid on and an additional 25-30 min with lid removed (internal temperature goal 190-210 degrees Fahrenheit) Open bake Instructions 12. In your preheated oven add a pan or cookie sheet or baking tray to bottom of oven. 13. Add ice, boiling water, or towels soaked in boiling water in order to create steam in the oven. 14. Bake for 45 or more minutes and check internal temperature. Allow bread to develop color to your liking. 15. Remove from oven and let bread cool completely before you serve.
