I start the morning by collecting garden flowers and enjoying breakfast outside in the sunshine before moving into the kitchen. This week in the Seasonal Kitchen, I’m cooking with fresh garden harvests, preparing a simple asparagus quiche, baking homemade scones, and doing a seasonal shop at Lidl. I’m also taking some time for a gentle spring home reset and refreshing our dining room for the new season. Music: Epidemic Sound Classic Homemade Scones Start by preheating the oven to 200°C and lining a baking tray with parchment paper. In a large bowl, combine the flour, baking powder, sugar and a pinch of salt. Give everything a gentle stir to evenly mix the dry ingredients. Add the cold cubed butter and rub it into the flour using your fingertips. Continue until the mixture looks like soft breadcrumbs. Pour in the milk, then add the egg, adding vanilla if you like. Mix gently with a spoon until a soft dough forms. Be careful not to overmix, as this helps keep the scones light and tender. Turn the dough onto a lightly floured surface and gently pat it down to about 2–3 cm thick. Cut the dough into rounds using a glass or a cutter, and place them on the prepared baking tray. Brush the tops lightly with milk to help them turn golden in the oven. Bake for 12–15 minutes until the scones are lightly golden and risen.
