Urad Dal Halwa (உளுந்து அல்வா) is a traditional south Indian sweet recipe made with urad dhal, jaggery and ghee. It is rich in iron, protein, potassium, calcium, folic acid and improves bone density. It is a healthy dessert option for women especially during pregnancy. ---------------------------------------------------------------------------------------------- Ingredients: Urad Dal - 1 cup Jaggery - 1 cup Ghee - 3/4 cup Cashews - 8 Raisins - 8 Almond - 8 Cardamom Powder - 2 pinch Water - 3 cups --------------------------------------------------------------------------------------------- Recipe: 1. Dry roast Urad dal, cool and grind to a fine powder. 2. In a pan, add a tbsp of ghee, roast the cashews, almonds, raisins and keep aside. 3. In a pan add a tbsp of ghee and 1 cup of water. When warm add the ground urad dal and mix well. 4. Add 2 more cups of water and stir well with no lumps. 5. When bubbles appear, add jaggery and mix well. 6. Now add ghee at regular intervals(upto 1/2 cup) and keep stirring until all ghee is absorbed. 7. Now the ghee would start leaving to the sides of the pan. Add cardamom powder, fried nuts and mix well. 8.
