In this video I show y'all how to make fettuccine with red sauce and parm. When we think of pasta with red sauce it's usually made with spaghetti. Making it with fettuccine instead adds a little more texture and deliciousness to your pasta meal. This recipe uses garlic infused red sauce poured over a bed of al dente fettuccine and parmigiano reggiano (parmesan) cheese. Simply delicious! Shopping List: 1 lb. fettuccine 1/4-1/3 cup kosher salt per 4 quarts water and 1 lb. pasta (if using table salt use 1/2 that much) 2 tbsp. salted butter 1/2 cup pasta cooking water 1 cup pasta sauce such as marinara 1 tsp. olive oil 1 tbsp. minced garlic 1/4 tsp. dried basil 1/2 cup grated parmigiano reggiano cheese Parsley for garnish Directions: NOTE: MAKE SURE IF YOU USE THE AMOUNT OF SALT IN THE RECIPE YOU USE 4 QUARTS OF WATER TO 1 LB. PASTA. Bring 4 quarts water to a rapid boil in a tall pot. Wait to add the salt until the water comes to a rapid boil. Adding it before will just fall to the bottom and possibly scar your pot. You want the salt flowing around in the boiling water so that the pasta is seasoned. Add the fettuccine and stir for 30-45 seconds to keep from sticking. No oil is necessary. Boil 2 minutes less than package instructions for al dente texture. While the pasta is cooking, sauté the garlic for 30-45 seconds in the oil then add the sauce and basil to the garlic and warm. TIP: When using dried herbs, pinch them between your fingers to wake up those flavors. Before draining the pasta, remove the 1/2 cup starchy cooking water and set aside. Drain, but don't rinse the pasta. Add the butter and toss. Add the cooked fettuccine, cheese and reserve pasta water to the sauce and toss to coat. Or just add the sauce to the drained pasta and toss. The starchy water marries the sauce and cheese to the pasta. Plate up and top with more cheese and parsley. Enjoy!
