Growing up extremely poor, my Mom often had to make due with what we had laying around to make sure there was SOMETHING to put on the table as a single mom trying to raise four kids below the poverty line. This creativity out of necessity led to the creation of a myriad of dishes that are both economical and surprisingly delicious. Her most popular dish amongst us kids was "souper rice" which is exactly the sum of its parts. This was a 3-ingredient struggle meal my mom invented when the emergency grocery budget was tight. It’s a true pantry staple dinner using just condensed soup, instant rice, and canned mushrooms. But it worked, it kept us fed, and it's a cheap and efficient way to put a hot meal on the table. Think of it like a poverty risotto made with shelf-stable ingredients. It's vegetarian (potentially vegan), affordable, and easy enough that even a kid can make it. RECIPE 1 can cream of __________ condensed soup 1 can's worth of Instant rice 1 can's worth of tap water (or rehydrated milk or whatever liquid you have on hand) 1 canned vegetable of your choosing (drained) SEASONING IDEAS A few dashed of worcestershire sauce A few shakes of MSG Salt, Pepper, Garlic Powder to taste Combine all ingredients into small saucepan Place over MED heat Stir every few minutes to prevent sticking Cover and reduce heat to LOW once a bare simmer reached Continue stirring every 1-2min, tasting occasionally until instant rice is tender Feel free to use this recipe as a baseline and make it your own. Consider adding curry and coconut milk, changing the base soup to a different flavor, add butter and fresh parmesan for something closer to risotto... the only limit is your imagination.
