It leads to product quality and safety degradation as well as undesirable sensory characteristics. Two primary processes contribute to this deterioration: hydrolysis and oxidation. ▶️Hydrolysis: This process, involves the breakdown of triacylglycerols (fats) into free fatty acids and glycerol. It occurs naturally over time but accelerates with exposure to moisture and heat. ▶️Oxidation: This deterioration pathway involves highly reactive free radicals that initiate a chain reaction, breaking down oil molecules and generating volatile compounds responsible for the rancid odour and flavour. Light, heat, pro-oxidants (e.g., metals), and residual moisture from processing can all trigger oxidation. Oil susceptibility to rancidity depends on several factors. Oils rich in unsaturated fatty acids, such as those derived from nuts, are more prone to degradation than oils with a high content of saturated fatty acids, like coconut oil. Additionally, factors like heat, light, moisture, and the presence of pro-oxidant metals all contribute to a more rapid decline in oil quality. Maintaining oil quality in the food industry requires proper storage (cool, dark places), minimizing exposure to pro-oxidants, and regular testing. ▶️ The food industry employs various methods to assess oil quality and prevent rancidity: • Sensory Evaluation: Trained professionals rely on their sense of smell and taste to detect off-odours and flavours indicative of rancidity. • Test Strips: These convenient tools provide a quick and easy approach to estimating free fatty acid levels, a marker of hydrolysis. • Laboratory Analysis: Techniques like gas chromatography accurately measure free fatty acids (hydrolysis) and peroxide value (oxidation). • Total Oxidation (TOTOX) Test: This comprehensive approach combines results from multiple parameters to provide a holistic picture of oil integrity. • Total Polar Compounds (TPC) Meter: This industrial tool facilitates hot oil testing during frying processes, a critical aspect of quality control. • Headspace Analysis: This targeted method, used in specific industries like nut processing, detects volatile compounds indicative of fat degradation. Food businesses can ensure optimal oil quality by understanding the scientific basis of oil rancidity and implementing effective detection methods. This safeguards product integrity and prioritizes consumer health by mitigating potential risks associated with rancid oil consumption.
