This traditional Mangalorean-style dry chicken dish is made with a freshly roasted and ground masala, fragrant coconut, and a touch of love - just like Mom makes it! ❤️ Recipe Steps: Dry Roast Spices: Dried red chillies, coriander seeds, jeera, methi, and pepper until aromatic. In the same pan, fry curry leaves and garam masala. Keep aside. Lightly roast grated coconut till golden and keep aside. First, grind roasted spices into a fine powder (no water). Then, pulse the coconut just for 10 seconds (not fine). In a vessel add some ghee, sauté onions and ginger-garlic paste till golden. Add tomatoes and salt, let it melt. Add chicken and cook uncovered for 2-3 mins. Add mint and coriander leaves on top, close the lid, and cook for 15 mins. Add Masala & Coconut: Mix in the ground masala and adjust salt. Cook 5 mins, then add coconut and cook another 5 mins.
