Hello dear fan of Global Kitchen 121, Today I have for you a new cooking recipe from Afghanistan and it is about one of the famous food (Qabuli Pulao) Qabuli Pulao (also spelled as Qabule Afghani or Kabuli Pulao) is a traditional Afghan dish known for its flavorful rice and tender meat. It is often served on special occasions and gatherings. Here's a basic recipe for Qabuli Pulao: Ingredients: 3 cups Basmati rice 500g lamb or beef, cut into pieces 1 large onion, finely chopped 3-4 carrots, julienned 1/2 cup raisins 1/4 cup cooking oil or ghee 2 teaspoons ground cumin 1 teaspoon ground cardamom Salt to taste 4 cups water or lamb/beef broth Instructions: Rinse the rice in cold water until the water runs clear. Soak the rice in water and set it aside for 60 minutes. In a large pot or a deep, heavy-bottomed saucepan, heat the cooking oil or ghee over medium heat. Add the chopped onions and cook until they turn golden brown. Add the meat pieces to the pot and cook until they are lightly browned on all sides. Stir in the ground cumin, cardamom, cinnamon, and salt. Mix well to coat the meat with the spices. Add 2 cups of water or broth to the pot and bring it to a boil. Reduce the heat to low, cover the pot, and let the meat simmer until it becomes tender. You may need to add more water or broth if it starts to dry out. Preheat your oven to 350°F (175°C). Drain the soaked rice and add it to the pot with the cooked meat. Gently mix the rice with the meat and spices. Pour the broth over the rice and meat, ensuring the liquid covers the rice entirely and the caramelized carrots, raisins, and some of ground cumin, cardamom, cinnamon on top of the rice . Cover the pot with a tight-fitting lid or foil and place it in the preheated oven. Let it bake for about 20-30 minutes or until the rice is fully cooked and fluffy. Your oven heat should be after first 20 minute slowly low (75°C) Once the rice is cooked, remove the pot from the oven and fluff the rice with a fork. Your delicious Qabuli Pulao is ready to be enjoyed! This recipe serves approximately 4-6 people, so adjust the quantities accordingly based on your needs.
