In this video I show how I smoke salmon on a regular charcoal grill — no smoker required. This piece of salmon weighs just over a pound and cost about $12, and I only used around $1.50 worth of charcoal and apple wood chips, making this an affordable way to make great smoked salmon at home. We start in the kitchen with raw salmon, using kosher salt and brown sugar for a simple dry cure, then let it rest in the fridge for about an hour. After that, I slice the salmon into 1-inch strips and move outside to the grill. I show how to arrange the coals to one side for indirect heat, light them, and use apple wood chips soaked in water inside a stainless-steel bowl. The bowl and coals are covered with aluminum foil to deflect heat and create clean smoke. The salmon cooks on the opposite side of the grill with the lid on the whole time. I talk through the entire process and explain what to watch for as it cooks.
