National Bacon Day is celebrated on December 30 and honors one of the world’s most popular foods. Bacon dates back to 1500 BC, when the Chinese preserved pork bellies with salt, and it later spread through Europe as pigs were domesticated and pork curing techniques improved. The Romans enjoyed a form of bacon called petaso, while Anglo-Saxons relied on bacon fat for cooking. Pigs were brought to North America by explorers such as Christopher Columbus and Hernando de Soto, and escaped pigs became the razorbacks still known today. The phrase “bring home the bacon” originated in medieval England, where a side of bacon was awarded to a husband who proved marital harmony. Today, bacon is used far beyond breakfast, with billions of pounds consumed each year in the United States, appearing in everything from burgers to candles, while reminding us of our responsibility to care for the animals God created.
