Lunch with Pâté en Croûte at Daniel & Denise in Lyon, France

🔊🗣️🎶 In most countries, it’s the food of the working peasant class that eventually becomes part of the national identity—e.g. ceviche in Peru, sauerkraut in Eastern Europe, etc. Salt, fat, and acids extend the shelf life of perishables, inadvertently defining national palates with local spices. It’s no wonder #French cuisine is full of fats and offal; the #Bourgeoisie simply gentrified peasant food, like #hipsters gentrified warehouses in Brooklyn. One way to extend the life of #meat, #offal, and fat is to mix it all up and make a #meatloaf, wrap it in dough, and bake it. And that’s just what pâté en croûte is. #PateEnCroute has become so elevated over the centuries that it’s one of the dishes that define #Lyonnaise cuisine. We watched its preparation at @MichelinGuide-recommended Daniel & Denise, a bonafide #bouchonLyonnais not just because it sports the official signage at its entrance; its Chef @JosephViolaMOF won Best Pâté en Croûte in 2009. 🏆 (I’m told the current champion is #Japanese.) Chef unfortunately called in sick, but thankfully Chef @ReynaudCyril was also a talent in the kitchen. With #veal striploin, duck #foiegras, veal #sweetbreads, and a pâté of #pork neck, veal rump, #chicken livers, #mushrooms, and herbs, he assembled the loaf in an envelope of raw dough, layer at a time, with white pepper in between each. Sealed and brushed with egg yolk, the whole thing was baked in an instant by the magic of Instagram. To finish it off, he poured in chicken fat gelatin to seal up the vent holes he’d poked for #baking.
