CHECK ME OUT ON Instagram: @stingraytomsfl AND Facebook: stingray_tom ================================== THE RECIPES: Kapok Tree Inn Planters Punch Original Recipe 2 oz orange juice 2 oz pineapple juice 2 oz lime juice 1 1/4 oz white rum 1 1/4 oz amber rum 1/2 egg white Shake ingredients and pour into glass filled with ice. Top with 3/4 oz of grenadine and 1 oz of heavy Jamaican rum. Decorate with fruit. =================================== Kapok Tree Inn Corn Fritters Original Recipe 1 cup all-purpose flour 1 1/2 teaspoons baking powder 1 tablespoon sugar 1 scant tablespoon salt 1 egg 1/4 cup milk 1/2 cup whole kernel corn Cooking oil for deep frying Confectioner's sugar for dusting Resift flour, baking powder, sugar and salt together. Add egg, milk and corn. Stir until blended. Drop batter into cooking oil a teaspoonful at a time. Maintain fat at 350 degrees and fry fritters until golden brown, turning once with a spoon to cook evenly. Remove fritters from fat and drain on paper towel. Serve piping hot on warm platter.
