Ingredients: 5-6 chicken drumsticks 1 small pumpkin, peel and cut into small pieces 2 red onions, cut into large slices ½ cup walnuts, chopped 1 tbsp balsamic vinegar 3 tbsp olive oil 1 tsp sweetener 1 tbsp dried oregano Salt Black pepper Instructions: 1. Season the chicken drumsticks with salt, black pepper, ½ tbsp oregano, drizzle with 1 tbsp olive oil, stir and let it sit at least for 30 minutes. 2. Pour the walnuts evenly onto the bottom of the oven dish. 3. Put the pumpkin on top of the walnuts. 4. Add onion. 5. Sprinkle vegetables with 1/2 tbsp dried oregano, salt and pepper, drizzle with 2 tbsp olive oil. 6. Spread the chicken drumsticks over the vegetables, drizzle with balsamic vinegar, and sweetener. 7. Bake at 400F for 25 minutes, then mix the vegetables and chicken, so that the walnuts remain at the bottom, and bake until tender for about 30-35 minutes.
