In a bowl: Mix chopped onion + salt + paprika + crushed garlic + lemon juice. Add chicken pieces, stir well. Cover with plastic wrap and refrigerate for exactly 1 hour. Adding Saffron (after 1 hour): Remove chicken from fridge after 1 hour. Pour saffron infusion over the chicken and stir again to distribute evenly. Return to fridge for at least 30 more minutes (or up to 2–3 hours – longer = better color & aroma). Before Skewering: Separate the chopped onions from the chicken (save them for sautéing).
