Making our food in the van needs to be really easy because we have limited space to make the food, limited burners on our stove, limited space in our fridge, and we have super limited time. Plus, we're vegan! So here are three vegan, nutritious meals that take 30 minutes or less to make, that taste awesome too! AND follow us around while we explore Mt. Rainier. _______________________ Energy Balls Recipe: 1 1/2 cup of dry oats 2 heaping spoonfuls of peanut butter 1 tbls. agave 1/2 cup of coconut flakes 6 dates chopped up 1/4 cup of cacoa nibs or dark chocolate chunks chopped up 1/4 cup of flax seeds 1/4 cup of chia seeds Mix together well. If the mixture isn't wet and sticky enough to ball up, add more peanut butter and/or agave. Refrigerate for 30 minutes (I didn't and it worked okayyyy but it will be easier to form into balls if it's refrigerated).
