How Turks Cook Eggs? 10 Min Meat & Veg Recipe

If you think eggs are only for breakfast… think again. In this video, I’ll show you how we cook eggs in Turkey as a quick, satisfying main meal — ready in just 10 minutes. With just a few simple ingredients like eggs, minced meat, or vegetables, you can create incredibly delicious and nourishing dishes at home. We’re making 2 easy egg recipes: 🥩 Minced meat eggs (a rich, protein-packed classic) 🥬 Spinach eggs (a lighter vegetarian version) Minced Meat with Eggs 150 g double-ground beef mince from the rib section 1 large onion, finely chopped 2 tablespoons butter 1/5 whole nutmeg, finely grated 3 eggs ½ teaspoon salt ½ teaspoon black pepper 1 pinch red pepper flakes 6 sprigs parsley, finely chopped • Heat a large pan well and add the 150 g double-ground beef mince. Cook it over high heat, breaking it up with a wooden spatula as it browns so the meat turns fine and soft rather than staying in large lumps. • Once the mince turns from red to grey and releases its moisture, add the finely chopped large onion. Stir well so the onion and mince cook together. If your mince is lean, you can add a little butter or olive oil at this stage, but if it has enough fat, continue as is. • Add part of the salt while the onion and mince are cooking. This helps the onion release its moisture and lets the mince absorb that flavour, making the mixture softer and juicier. • Lower the heat and cook for 10–15 minutes, stirring often, until the onion softens, caramelizes, and almost disappears into the mince. The ideal result is a deep brown mixture where you no longer clearly see the onion. If you have previously cooked mince in the freezer, you can also use that here. • If flavourful bits stick to the bottom of the pan, add a few tablespoons of water and scrape the bottom well to release all that flavour back into the mixture. • Add the 2 tablespoons butter and let it melt into the mince. This enriches the flavour and helps the mixture brown beautifully. Season with the remaining salt, the black pepper, and the finely grated nutmeg. Cook briefly until everything smells fragrant and the mixture looks brown, juicy, and well combined. • Keep the mince in the same pan if possible. This makes the egg much more delicious. Reduce the heat to low. • Using a spatula, make little wells in the mince for the 3 eggs. Crack each egg carefully. If your eggs are very fresh, gently move each yolk aside and mix only the whites into the mince. Repeat with remaining 2 eggs, keeping the yolks intact. This way, the whites enrich the meat while the yolks stay creamy like a sauce. • If you are not sure how fresh your eggs are, crack them into a separate bowl first, separate the whites and yolks, stir the whites into the pan first, then add the yolks later one by one. • Sprinkle the eggs and mince with a little more salt and black pepper where needed. If you like, you can burst one yolk slightly and spread it through the pan for even more richness. • Scatter over the red pepper flakes and the finely chopped parsley, including the tender parsley stems for extra flavour. • Cover the pan with a lid and cook for about 1 minute, just until the yolks are warmed and any still-transparent egg white is set. If you see any glossy uncooked white, gently mix just those parts into the hot mince. • Serve immediately with warm bread.
