We’re two hours from San Jose, in the central mountainous part of Costa Rica. Aquiares is the first coffee mill in the country, and a great place to visit if you come to the country. From above you can see: the coffee trees aren’t in perfect rows, and are broken up by taller native trees. They provide shade for the coffee plants, drop seeds and branches, and lure more birds and animals, all of which help to enrich the soil naturally over time. They’ve planted 50,000 shade trees to increase biodiversity on the farm. Harvest season sees an influx of 100 to 1,000 workers each day. They’re paid cash daily, and covered by health insurance. They’re picking red cherries off the plants, which are then sorted and dried in a tumbler, then warmed in a furnace. At Aquiares, a lot of the coffee beans go through a more environmentally-friendly process. The company achieved “carbon neutral” status years ago. It’s from a combination of the oxygen created by the trees planted, and cutting back on emissions. Rather than using a furnace, many batches of coffee beans are naturally dried by the sun in greenhouses. The coffee beans sold here are sold to companies around the world under different brand names, but chances are, your next Starbucks or Nespresso came from this very farm.
