Hello everybody and welcome back. Today we will see how to prepare frosted cream puffs. Let's see what we need: some puffs, flavoured creams (in this case, we chose a Chantilly custard, a coffee cream, a chocolate one, and some Chantilly fresh cream). To decorate, we will need some water icing, coffee and chocolate icing and some icing sugar. After putting the creams into pastry bags with a scupper, we start preparing the puffs. We cut the small doughnuts in the half and we cut the upper part of the puffs. Usually the ones covered in coarse-grained sugar are filled with the fresh cream, and the small doughnuts with the Chantilly cream. We cover them with the upper part and we decorate with icing sugar, then we dispose them on a serving tray. Another way of filling the puff is making a hole on their base, using a paring knife or with the pastry bag scupper. Once we have filled the puff, we can ice them. We dip them directly into the icing, or we can use a teaspoon, pouring the icing on the top of the puff. We go on until we have finished all the puffs. If the icing gets solid, we can warm them in a double saucepan or in the microwave for a few seconds. We can also shape the puff as a swan. We prepare some drop-shaped puff and another one in the shape of a "2". We cut the lower part, then the upper part in two halves; we fill with Chantilly cream or fresh cream, then we place the head and the wings and we spread with icing sugar. Our cream puffs are ready.
