for more recipes or to find your nearest group visit https://www.slimmingworld.co.uk/ Serves 4 Syns per serving - FREE low calorie cooking spray 2 large red peppers 4 small red onions, 6 x Slimming World chorizo style sausages, thawed (Slimming World food range available at Iceland https://www.iceland.co.uk/slimming-world) 200g dried orzo pasta 2 tbsp balsamic vinegar 350g cherry tomatoes fresh basil leaves flat leaf parsley salt and freshly ground black pepper Preheat the oven to 220C/fan200C/Gas 7. Spray the base of a large non-stick roasting tin with cooking spray. Spread the red peppers and red onions over the base of the tin, season and roast for 10 - 15 minutes until beginning to soften. Add the chorizo sausages. Return to the oven and roast for a further 15 minutes. Meanwhile, drop the orzo into the boiling water, stir once and leave to cook for 10 minutes until just tender (al dente). Drain and tip into a large bowl and set to one side. Remove sausages from the roasting tin. When cool enough to handle, remove and discard the skins and cut the sausages into small chunks. Scoop one-third of the roasted red peppers into a food processor, add the balsamic vinegar, and blend until smooth. Season to taste with salt and pepper. Stir the roasted red pepper dressing into the orzo and then fold in the roasted red peppers and onions, chorizo sausages, tomatoes, basil and flat leaf parsley. Adjust the seasoning to taste and serve straight away.
