Lightly roast it in a pan for 2 minutes (no need to brown it). Once cool, grind it into a fine powder and set it aside. Next, grind ¼ cup of sago (javvarisi) separately and keep it in another bowl. In a large mixing bowl, combine the powdered millet, sago, 1 tsp rock salt, 1 tsp sugar, 2 tsp oil, 1 tsp crushed ginger-green chili paste, and 1 cup of slightly sour curd (250 ml). Mix well, adding ½ cup of water gradually to form a thick batter. Adjust with a little more water if needed. Let the batter rest for 20 minutes. After 20 minutes, add 1 tsp of Eno fruit salt or baking soda for fluffiness. Pour the batter into a greased banana leaf or butter paper-lined steamer tray. Sprinkle pepper powder and steam for 20 minutes. Prepare a tempering with 1 tbsp oil, 1 tsp cumin, 2 tsp sesame seeds, green chilies, and curry leaves. Pour it over the cooled dhokla, garnish with coriander, and cut into your favorite shapes. Serve hot with mint chutney. Soft, spongy dhokla is ready to enjoy!
