Love it or hate it, natto is the most controversial of all Japanese foods. With a smell likened to that of cheesy feet, and a mucus-like appearance, there doesn’t seem to be a lot going for this (healthy, nutritious!) traditional Japanese breakfast food. But these small but mighty fermented soybeans are a superfood renowned for keeping the Japanese population youthful and promote longevity with their one-of-a-kind gut friendly enzyme, Nattokinase, so we held our noses and took a trip to Mito in Ibaraki Prefecture, the home of Japan’s best natto for the most traditional of all traditional Japanese breakfasts: Mito Natto (fermented soybeans wrapped in rice straw).
