Sofrito de Puerto Rico! This video includes: • Ingredients • How to Prepare • Avoid 4 Ingredients Used by Some! I will be using my 30 year old food processor (I am not as young as I look) to illustrate how easy this is done and how to avoid certain habits that over time (while stored) could hinder its flavor. Ingredients: 4 onions 3 garlic peeled (less if you prefer, but I love garlic) 1 green bell pepper, seeded and chopped 1 red bell pepper, seeded and chopped 3 bunch fresh cilantro, stems trimmed 4 tablespoons oregano leaves removed from stems (less if you prefer but not less than 2 tbs) 1-2 tablespoon ground cumin 1 teaspoon ground black pepper 8-10 mini sweet peppers, seeded and chopped (red, orange, yellow variety) 1 Cubanelle pepper, seeded and chopped (optional) 1 to 2 bunch culantro (if cannot find it, replace with 1 bunch cilantro) This will render between 4-6 cups or “containers”. IMPORTANT NOTE: I fully drained the natural liquids to illustrate how it is done if you choose that route but beware that the final product will look drier at first. If you choose not to fully drain (which is also fine) then your final product will look less dried with a pretty texture. This is not a beauty context so choose the style that best adapt to your style of cooking — noting that once frozen for a long period of time the appearance will be similar.
