IIngredients ½ kilo chicken ½ cup cooking oil ¼ kilo chicken liver 1 teaspoon ground black pepper 1 tablespoon soy sauce 1 medium-sized red onion (chopped) 2 stalks spring onion (chopped) 1 pieces red chili (chopped) 2 tablespoons mayonnaise 3 pieces calamansi juice 1 teaspoon salt 2 tablespoons butter Directions To prepare the chicken, remove the skin and bones. Save the chicken skin for later. Preheat the oil in a pan and fry the chicken skin for 5 minutes. Take it out once crispy. In the same pan, fry the chicken meat at low heat. Cook till it turns golden brown. Make sure to flip to cook both sides. Take them out and set aside. Fry the chicken liver in the same pan it browns. Take these out. Chop the fried chicken skin, chicken liver, cooked chicken to bits. Place all the chopped chicken parts into a bowl. Mix in black pepper, soy sauce, and mix well. Add red onions, spring onions, chili, mayonnaise, and calamnsi juice. Mix well. Add salt to taste and give this another mix. In a hot sizzling plate, melt the butter, and place in the chicken sisig mixture. Toss it around and serve hot.
