We live in Columbus, Indiana (home of architectural wonders and people such as Tony Stewart, Mike Pence, and just north of Seymour to throw in John Mellencamp to name drop more, lol). All that to say we aren't famous for maple syrup around here. But we wanted to try for fun and to keep me busy while I'm doing other woodworking projects and building other things. It's a long video, and just like a lot of people, I sometimes say syrup for sap and sap for syrup on accident. But this shows the process I've used to take 5 gallons of sap and boil it down to 1 pint of syrup. In general, I will sometimes wait and add batches of finished syrup together to make quart jars or get just the right amount in a pint. But you can do that by adding some into the boil or straight into the jar. We are pretty consistently getting a 40:1 ratio of sap to syrup. For a Norwegian Maple, that is regarded as a weed tree around here, that's pretty good! The flavor is very full and bodied and has that extra something you get when you don't have gallons upon gallons of syrup being mixed together from different trees and over-filtered to remove anything but sugar. That's what the big operations in Maple Syrup Land do, kind of like the honey industry. Syrup from one tree, in one place, is extra special. I encourage you to try it! But buy some real taps. I lost a lot of sap this way!
