Bite-Sized Rainbow Cake Truffles

Hey loves! Today we’re making Rainbow Cake Truffles which are absolutely stunning. They are not only extremely simple to put together, they’re also incredibly fun to make. These bite-sized truffles are moist, soft, and gorgeous when you bite into them. The white chocolate coating in contrast with the vibrant colors of the cake inside makes this particular recipe far more visually appealing compared to other typical cake truffles that you’d make. In this video, I used a box cake mix and canned vanilla frosting because the truffles are time-consuming, but if you’d like to make it from scratch, I will include the recipes at the very bottom of the description box. As with all of my videos, the description box has the full detailed recipe along with metric and standard measurements. Rainbow Cake Truffles Recipe Ingredients: -White or Yellow Box Cake Mix (+ ingredients required to prepare the batter)(cake recipe can be found at the bottom of the description box) -food coloring (red, blue, green, yellow) -6 tablespoons vanilla Frosting -2 cups (350g) white chocolate chips -1-1 ½ teaspoons vegetable oil or shortening Instructions: Preheat the oven to 350 F (180 C) In a large bowl, prepare the cake batter according to the instructions found on the box. Divide an equal amount of batter between 6 bowls. Use the food coloring to tint each bowl with a different color of the rainbow (you could use any other colors of choice) To make orange: 1 drop of red + 1 drop of yellow To make purple: 1 drop of blue + 1 drop of red Line a muffin tin 12 with cupcake liners. Pour the batter into each tin. Each color will make two muffins Bake for as long as the box says (about 30 minutes in my case) or until a toothpick comes out clean if inserted in the center. Remove from the oven and allow to cool completely before handling. Once cooled, remove the cupcake wrapping and break apart the muffins with your fingers until completely crumbled. Each color should be in 6 separate bowls or plates. Add 1 tablespoon of vanilla frosting for each color and mix until combined. The crumbs should be able to stick together once the frosting has been incorporated. To assemble the truffles, roll ¼ inch balls of every color. To make one truffle, you’ll need one ¼ inch ball of each color. Take one ball of each color and press them together until they form a large ball. Repeat this with the rest of the cake crumbs. After the truffles have been assembled, freeze for at least 2 hours. Once chilled, keep in the freezer while making the white chocolate. Melt the chocolate in a microwave or double boiler. Add the shortening or oil to thin out the chocolate. Transfer the chocolate to a bowl. Remove the truffles from the freezer. Coat each ball with chocolate and rotate with a spoon until all sides have been coated. Use a fork to allow the excess chocolate to drip out. Transfer to a separate clean surface and allow the chocolate to harden. Repeat until all of the truffles have been coated completely. Wait until the chocolate solidifies and serve! Enjoy :) Vanilla Cake Recipe: (this recipe is not mine; here is the original: https://natashaskitchen.com/perfect-v... -1 ¼ cup (158g) all-purpose flour -1 ¼ tsp baking powder -½ teaspoon salt -½ cup (113g) softened butter -¾ cup (150g) granulated sugar -2 large eggs -2 teaspoons vanilla extract -½ cup (118 ml) buttermilk Instructions: Preheat the oven to 350 F (180 C) In a medium-sized bowl, add the flour, baking powder, and salt. Mix together then set aside In a separate bowl, beat the sugar and butter using an electric mixer on medium-high speed. Beat for about 5 minutes until the mixture is light and fluffy. Add the eggs in one at a time and beat the mixture. Add the vanilla, then beat again until combined. Reduce the speed to medium and alternate the dry ingredients and the buttermilk until all of the ingredients are well incorporated. Now that the better is prepared, follow the instructions above to make the rainbow truffles. To make Vanilla Buttercream Frosting: Ingredients: -3 tablespoons softened, unsalted butter -⅓ cup powdered sugar -¼ teaspoon vanilla extract -milk, if needed Instructions: In a small bowl, add the butter and use a wooden spoon to cream until fluffy. (An electric mixer is not required because we’re only making a small amount) Add in the vanilla extract and powdered sugar until well combined. It should be thick and fluffy. Add milk ¼ teaspoon at a time, if needed. Use in the recipe! That’s it for today’s recipe! I hope you enjoy and I’ll see you soon. Have a wonderful day :)
