Fried Chicken Challenge | Drunk Vs. Stoned

Recipes: VODKA BEER FRIED CHICKEN INGREDIENTS: DRY BRINE -1 tablespoon kosher salt -1 teaspoon freshly ground black pepper -1 teaspoon garlic powder -1/2 teaspoon cayenne -1 teaspoon onion powder -2 teaspoons orange zest -8 bones in chicken pieces, (4 drumsticks and 4 thighs) -6 cups canola oil, if frying in a dutch oven COATING: -2 cups all purpose flour -2 teaspoons baking powder -1 teaspoon onion powder -1 teaspoon garlic powder -1 teaspoon cayenne pepper -1 ½ teaspoons kosher salt, plus more to taste -1 cup buttermilk -2 large egg whites -2 tablespoons vodka -2 tablespoon beer (dry, crisp beer, like a lager or pilsner) Beer Cheese Dip Ingredients: -3 Tbsp butter -3 Tbsp all purpose flour -1/2 cup lager/pilsner beer (same beer as chicken) -1 cup half and half -1 tsp grainy dijon mustard -1 tsp Worcestershire sauce -1/2 tsp garlic powder -1/2 tsp kosher salt -1/4 tsp black pepper -1/8 tsp cayenne pepper -pinch of dried parsley (optional) -1 cup sharp cheddar -1 cup pepper jack -1 cup cream gouda -Chives for garnish FRIED CHICKEN RECIPE: 1. Dry brine the chicken: In a small bowl, mix together the salt, black pepper, garlic powder, onion powder, cayenne, and orange zest. 2. Pat the chicken pieces dry with a paper towel and season with the salt mixture, evenly coating each piece. 3. Line a large resealable container with paper towels and add the seasoned chicken. 4. Refrigerate uncovered for at least 4 hours, preferably overnight. 5. 30 minutes before frying, remove the chicken from the refrigerator to bring to room temperature. -You want it to be room temperature. 6. Add the canola oil to a large Dutch oven and heat over medium heat until the temperature reaches 350°F (180°C) -Or use a deep fryer set to 350 degrees 7. In a large bowl, whisk together the flour, baking powder, onion powder, garlic powder, cayenne, and salt. 8. In a separate large bowl, whisk together the buttermilk, egg whites, beer, and vodka. 9. Working with one piece at a time, coat the dry-brined chicken in the flour mixture, then in the buttermilk mixture, then again in the flour, shaking off any excess. 10. Add 2–3 pieces of chicken to the hot oil and fry for 7–10 minutes, flipping once, until the internal temperature reaches 165°F (75°C) and the exterior is golden brown and crispy. BEER CHEESE RECIPE: 1. In a saucepan, melt butter over MED heat. Add flour and whisk until combined. Cook 30 seconds, while whisking occasionally. 2. Add beer, whisking continuously as you pour, eliminating any lumps from the flour mixture. Slowly add in **half and half**, whisking as you pour 3.Cook over MED heat, whisking often, for several minutes, until mixture has thickened. Stir in mustard, Worcestershire sauce, garlic powder, salt, pepper, and cayenne. 4.Add cheese, a handful at a time, and stir until completely melted. Serve warm. HOT CHEETOS FRIED CHICKEN: CHICKEN INGREDIENTS: Pickle Juice Brine -1 cup buttermilk -1 cup pickle juice Coating -1 cup crushed Flamin Hot Cheetos -1 tsp salt ¾ tsp pepper SMOKEY RANCH DIP INGREDIENTS: Smokey Ranch ½ buttermilk ¼ cup mayo -Half a lime -2 tbsp chopped chipotles in adobo -Chopped cilantro ½ tsp honey ½ tsp salt FRIED CHICKEN RECIPE: 1. Combine ingredients for the brine and pour over chicken in a bowl. Refrigerate for 3+ hours. 2. To make Flamin Hot Cheetos crust, pour Cheetos into a gallon ziploc and crush. Pour into a shallow bowl or plate. 3. Pour about 1 cup flour into another shallow bowl, and add salt and pepper. 4. Remove chicken from fridge. First dredge in the bowl of flour, then dunk into brine mixture. Then, dredge in Hot Cheetos crust. 5. Fry chicken at 347 degrees for 3-5 minutes 6. Remove and let cool slightly, fry chicken again at 350 degrees for 2-3 mins SMOKEY RANCH RECIPE: 1. Combine all ingredients. Season with salt and pepper to taste. FOLLOW US EVERYWHERE!
