This creamy and thick yogurt is a traditional Nepali delicacy that’s rich in flavor and perfect for any occasion. Simple ingredients, easy method, and delicious results! 📝 Ingredients: • 2.5 Liters Milk • 15–20 Cardamom Pods • Sugar (to taste) • 2 Tbsp Old Yogurt 👩🍳 Method: 1️⃣ Take 2.5 liters of milk and cook on medium flame. 2️⃣ Once the milk boils, crush 15–20 cardamom pods and add them to the milk. 3️⃣ Add sugar to taste and continue boiling the milk. 4️⃣ Use a strainer to remove the cardamom. This will ensure your curd doesn’t have black cardamom pieces. 5️⃣ Boil the milk on medium flame until it becomes slightly thick and reduced to about 1.5 liters. This will make your Juju Dhau creamier and thicker. 6️⃣ Turn off the heat and take a little milk into a separate bowl. Let it cool slightly. Add about 2 tablespoons of old yogurt to the milk, mix well, and set aside. 7️⃣ Stir the remaining milk well (this gives a good texture to your Juju Dhau) and transfer it to another container. 8️⃣ When the milk becomes lukewarm, add the yogurt mixture and mix well. 9️⃣ Keep the container in a warm place until the yogurt sets properly. (I kept it inside the oven without turning it on.) 🔟 Let it sit overnight for best results.
