Oi Muchim (오이 무침) – Korean Spicy Cucumber Salad A refreshing yet spicy Korean side dish made with crisp cucumbers, onions, garlic, and chili flakes. Ready in just 20 minutes! ------ Our Amazon store: https://l1nq.com/KoreanMomskitchen ------ Ingredients: 2 cucumbers thinly sliced 1 small onion sliced 1 tsp salt (for sweating cucumbers) Sauce: 1/2 tbsp cloves garlic, minced 2 tbsp sugar 1/2 tbsp Kuti mirch – adjust for spice level 1 tbsp Kashmiri lal (red chili powder) 1 tbsp roasted sesame seeds 3 tbsp soya sauce (light) 1 tbsp vinegar or lemon juice (apple cider vinegar) 1 and half tbsp sesame oil Instructions: Prepare cucumbers: Slice cucumbers thinly. Toss with 1 tsp salt and let sit for 20 minutes to draw out excess water. Drain well. Slice onion thinly, same as cucumber. Mix seasoning: In a bowl, garlic, sugar, kuti mirch, kashmiri lal, sesame seeds, soya sauce, vinegar and sesame oil. Combine: Add cucumbers and onion to the seasoning mix and toss gently. Sprinkle sesame seeds on top. Serve: Enjoy immediately for maximum crunch, or refrigerate for 30 minutes to enhance flavors.
