RECIPE & TIME STAMPS ARE BELOW: This recipe is one of my favorites. It can be assembled up to two days in advance and can also be served at room temperature. Play with the herbs and cheese to make it your own. It can also be served as the "stuffing" on your Thanksgiving table by replacing the tarragon with sage and thyme. Mushroom & Gruyere Bread Pudding Serves 8-10 1 French loaf, crusts removed and torn into 1 inch cubes 2 tablespoons unsalted butter 2 tablespoons olive oil, plus more for drizzling 2 pounds mushroom, I like shiitake and baby bella for this recipe 1 shallot, minced 1 garlic clove, minced 1/1/2 pints of heavy cream (you could also use half & half or whole milk to lighten it up) 4 eggs, beaten 1/1/2 cups gruyere cheese, grated 1 tablespoon fresh tarragon, chopped kosher salt freshly cracked black pepper Preheat your oven to 375 degrees. On a large sheet pan, toast your bread cubes in the oven for about 10 minutes or until golden brown. Set aside. Preheat a large saute pan or dutch oven over medium high heat. Add your butter and olive oil. Once melted, add your mushrooms. Saute the mushrooms for about 5-7 minutes, stirring every so often, until they are slightly golden. Add your shallot and garlic and season with salt and pepper. Saute for another 2 minutes, being mindful of not burning the garlic. Remove from the heat. Combine your eggs, cream, gruyere and tarragon in a large bowl. Season with salt and pepper. Whisk until it's nicely incorporated. Add your bread cubes and mushroom mixture. Toss gently to combine. Pour into a 3 quart casserole dish and drizzle the top lightly with olive oil. Bake in the oven until it's set, about 50-60 minutes. Serve hot or room temperature.
