Remove the skin. Cut into chunks. Put in pan and cook on medium flame. Mash the mixture. Leave to cool. Serve chilled or at room temperature. Starter Harira – Moroccan Soup Ingredients Chickpeas Vermicelli Tomatoes Tomato paste Onion Celery Coriander and parsley Corn flour Ginger Black pepper Salt Turmeric Olive oil Vegetable oil Preparation Boil tomatoes in water for 25 mins. With a blender, blend tomatoes into a sauce and add chopped onion. Add spices, tomato paste, olive oil, herbs – leave to cook for 20 mins. Add chickpeas, vermicelli and corn flour. Stir well to thicken. When cooked, garnish with coriander. Main Vegetable Tagine Ingredients Onions Tomato Potato Carrot Peas Chilli peppers Garlic Ginger Turmeric Olive oil Vegetable oil Water Salt and pepper Preparation Put half the water in a pot with tomatoes, onions and olive oil. Cook for 10 min on low heat Add all herbs, spices and crushed garlic. Leave to simmer Add carrots and continue to cook After 5 min, add potatoes and extra water Cook for further 10 min before add peas Once the carrots and potatoes are cooked to your liking, the tagine can be served. Dessert Souk fruit parfait Ingredients Unsweetened yogurt Rose water Seasonal fresh fruits Honey Crushed nuts Preparation Mix yogurt, rose water (or orange blossom water) and cinnamon in a bowl and refrigerate for an hour Finish with a sprinkle of cinnamon.
