This is a traditional Greek Vegetarian, vegan dish and one that I love very much - a humble but very yummy pea stew. Arakas - in Greek means peas :-) Peas cooked with carrots, potatoes in a delicious tomato and olive oil sauce. This dish falls under the category of 'ladera' which literally translated means 'oily' - cooked in olive oil...which as you know is the principal element of the Greek diet. In the summer, its great to use fresh peas, but I make this all year round, using frozen peas - like in this video. Its so much easier and you have a delicious and most importantly healthy meal whenever you like. It's a dish that you will find in every Greek home and I am sure you will love it. Give it a go! For Arakas - you will need: 500g frozen peas 2 medium potatoes 2 small carrots 2 medium onions half a tin of chopped tomatoes 2 cloves garlic 4 tablespoons olive oil 1 tablespoon tomato puree 1 tablespoon fresh dill Salt and pepper *This dish can also be frozen - which means you have a healthy meal ready in your freezer.
