Salisbury Steak Smash Burgers Burger Mix 2 Lb 80/20 Ground Beef 1/2 cup Panko Crumbs 1/2 cup Onion diced 1 Large Egg 1 TBL Dijon Mustard 1 tsp Italian Seasoning 1 TBL Worcestershire Sauce 1 tsp Garlic Salt Salt and Pepper to taste 6 Buns of your choice (I used Brioche) Salisbury Steak Sauce 2 TBL unsalted Butter 1 TBL Cornstarch mixed with 1 TBL water 1 cup Beef Broth 1 tsp Worcestershire Sauce 1/2 tsp Onion Powder 1/2 cup sliced Mushrooms Salt and Pepper to taste Place beef broth in a sauté pan please pan over hot burner on griddle. Place the butter on the hot griddle and put mushrooms in the butter to sauté. In a large bowl mix together: ground beef, Panko, garlic salt, Italian seasoning, Dijon mustard, egg and salt and pepper to taste. Mix thoroughly together until all seasonings are incorporated. Divide the 2 pounds of beef into 6- 1/3 LB patties. Put more butter on the griddle and place buns insides down on griddle to lightly toast. Add cornstarch and water mixture to pan with broth, whisk well, add the mushrooms and continue to stir over heat (about 3 more minutes). Remove pan when it reaches desired thickness. Remove buns once toasted place on cooling rack over griddle. Oil griddle, please patties on griddle using parchment paper, and a smasher smash down thin. Flip burgers when bottom side is browned. Spoon mushrooms and sauce onto burger, patties, and top with provolone cheese, if desired. Put a little water on the griddle to help make steam to melt the cheese and cover while it steams. Place patties in warm buns.
