Today I’ve linked up with my younger bro Mahkai and we’re throwing down a proper treat – Brown Stew Rigatoni 🤎🍝 This dish is all about that deep flavour: seasoned up soya chunks, rich brown stew vibes, and that perfect pasta mix. If you love comfort food, this one’s for you! 🥘 Recipe 1️⃣ Boil your soya chunks in water for 15–20 mins until they’re bouncy. Don’t overcook them or it’s long! While that’s happening, wash and chop your mushrooms and carrots. 2️⃣ Drain the chunks, squeeze ‘em dry like a sponge, then season them up nice with your spices. Leave in the fridge for at least 1 hour (overnight if you want it banging!). 3️⃣ Fry up your onions in oil, then add the soya chunks and veggie stock. Cover and let it slow cook for 1 hour so that brown stew flavour really comes alive. 4️⃣ Cook your rigatoni pasta, mix it all together… and boom – Brown Stew Rigatoni ready to buss up your plate 🙌. 🛒 Ingredients 250g dried soya chunks 500ml water (for boiling soya) 200g mushrooms, chopped 2 medium carrots, chopped 1 large onion, diced 2 tbsp cooking oil 500ml vegetable stock 350g rigatoni pasta Seasonings (to taste): 1 tsp all-purpose seasoning, 1 tsp paprika, 1 tsp garlic powder, ½ tsp black pepper, pinch of salt, and your favourite herbs/spices 👨🏽🍳 Big shout out to my lil bro Mahkai for rolling through and helping me chef this up.
