Panipopo Recipe / Samoan Coconut Buns Recipe : In a bowl, add 2 cups of plain flour, 1/2 a teaspoon of salt 25g of butter or table spread, softened 1.5 tablespoons of sugar 1.5 teaspoons of bakers yeast 1 cup of warm water Mix these together until it forms a batter, thicker than cake batter but not a dough-ball, so you may need to add another 1/2 cup of warm water if it needs thinning a bit. Cover and leave for approx 2 hours or until doubled in size. After 2hrs put a cup of flour onto the benchtop in a "cushion", pour the mixture on top and keep lifting and folding until you can knead it until it's no longer sticky (you may need more flour). Roll it out and chop into 12 peices. Make each piece into a worm shape and either make it into a spiral or a knot, place in a baking tray and leave for an hour to rise again. After 1hr pour over 1/2 the sauce (recipe below) and bake in a preheated oven at 200oC for 20 minutes. After 20 minutes pour over the rest of the sauce and cook for a further 20 minutes. If they're starting to brown on top then turn your oven down a bit so they don't burn! Leave on the bench to cool for at least 5 mins. Best served fresh & warm!!
