Basbousa recipe Ingredients: • 1½ cups semolina • ½ cup shredded coconut • 1½ tsp baking powder • ½ cup sugar • 2 eggs • 50ml cream • ½ cup cooking oil • Stuffing: 2 cups milk, 3½ tbsp cornflour, 70g sugar, 1 tsp vanilla sugar, 150ml cream • Syrup: 1 cup water, 250g sugar, 1 tsp lemon juice • Pistachios Steps: 1. Stuffing: Mix milk, cornflour, sugar, vanilla sugar, cream; cook medium heat, stir until thick, cool, put in piping bag. 2. Syrup: Boil water, sugar, lemon 15 min. 3. Batter: Mix semolina, coconut, baking powder, sugar; add eggs, cream, oil, mix well. 4. Assemble: Grease pan → half batter → cream → remaining batter. 5. Bake: Preheat 180°C, bake 30 min. 6. Finish: Pour syrup, garnish with pistachios. Serve. ——-///———/////——- Beef pulao Ingredients: • ½ cup oil • 1 onion (chopped) • 4 garlic cloves • 1 tsp black pepper seeds • 2 black cardamom • 1 star anise • 2 bay leaves • 1 tsp cumin seeds • 2 tomatoes (chopped) • 1 tbsp coriander powder • Salt to taste • 1½ tbsp pulao biryani masala • 500g beef • 2 cups rice • Water (to cover rice) • Orange food color (pinch) • Salad (for side) Steps: 1. In pressure cooker, heat oil, add onion + garlic. 2. Add whole spices, then beef. 3. Mix in coriander powder, salt, and tomatoes. 4. Add little water, cook until beef tender. 5. Transfer to pan, cook a few minutes. 6. Add pulao biryani masala, then rice + water to cover. 7. Add salt, cook until water dries. 8. Put on low heat for 20 mins, sprinkle orange color. 9. Serve hot with salad. ——————————— Curry chicken recipe Ingredients: • 1/3 cup oil • 1 chopped onion • 1 black cardamom • 1 tsp cumin seeds • 2 bay leaves • 1 star anise • chicken breast • 1 tbsp garlic • 1 tbsp coriander powder • ½ tbsp paprika powder • 2 tomato purees • Salt to taste • Water as needed Steps: 1. Heat oil, add onion and sauté. 2. Add whole spices: cardamom, cumin, bay leaves, star anise. 3. Add chicken and garlic, mix well. 4. Add coriander powder, paprika, and salt. 5. Add tomato purees and mix. 6. Cook on low heat for 25 minutes until chicken is tender.
