Similarly to how you drink carob during Ramadan, but you don't usually ask for it in other months. So it's become a tradition, nothing more. But the following day, if it's sunny, the number significantly decreases. Psychologically, people are influenced by this shift. Qatayef also remains one of the most affordable types of sweets, cheaper than anything else. It costs fifteen (shekel, around $4) and if you add cheese, it costs forty shekels ($13), giving you two kilos ( in the end, which can last a while. For 79-years-old Khairi al-Siouri, the tiny pancakes, stuffed with cream, nuts and served drizzling with syrup, are his life's work. Although his shops sells falafel, hummus among other items, Khairi has a special spot in his heart for the high-calorie dessert. Over the last 50 years, he honed a special batter recipe, making his shop a distinct Ramallah spot for locals, especially during Islam's holiest month.
