Khao Soi Thao Gae Ek (ข้าวซอยเฒ่าแก่เอก วัดพระแก้ว เชียงราย) specialises in Northern Thai classics and for me, it's worth flying to Chiang Rai just to eat here. We ordered khao soi with chicken, khao soi beef, khanom jeen nam ngiao, sai ua, chicken wings and drinks and the whole bill came to 590 THB. Of course I had to follow that up with a coffee and I found you an incredible farm to stall coffee stand.
